Chocolate Yogurt Swiss Roll

Ingredients:

  • 10 egg whites

  • 140 g granulated sugar

  • 1 tsp lemon juice/vinegar or 1/2 tsp cream of tartar

  • 10 egg yolks

  • 170 g flour (cake/all purpose flour)

  • 60 gram milk

  • 100 gram oil

  • 2 tsp vanilla extract


Instructions:

  1. Mix the flour and oil together in a medium bowl until a paste forms, quickly whisk in the milk and egg yolks, set aside.

  2. In a bowl of a stand mixer, beat the egg whites with lemon juice/vinegar/cream of tartar until the mixture turns white and big bubbles form.

  3. Add 1/3 of the sugar and continue mixing on high for a couple of minutes. When the meringue formed a soft peak, add in another 1/3 of the sugar and continue mixing on high until meringue reach medium peak.

  4. Add in the rest of the sugar and beat on high until stiff peak is formed.

  5. Fold 1/4 of the meringue into the egg yolks flour batter until no white streak is visible. Add them back into the rest of the meringue and gently fold until no white streak is visible. Do not over mix!

  6. Pour the cake batter into 2 baking sheets lined with parchment paper and bake at 350 F for 15 minutes. Take it out of the oven and let it rest for 5 minutes.

  7. Begin to roll the cake while it is still warm and top with filling of choice.


Enjoy the fluffy sponge cake swirl with your type of cream!
