Victor and Olivia's Bread Pudding

5 cups of stale bread torn into 2-inch pieces

- Spread torn bread chunks evenly into a lightly greased 13x9 inch baking pan

- Pour Cinnamon Pudding mixture over the bread pieces evenly

- Sprinkle chilled brown sugar margarine crumbs on top evenly

- Bake in the oven at 350• for 45 minutes

- Serve warm with ice cream!


Cinnamon Pudding mixture

2 cups oat milk

2/3 cup maple syrup

2 teaspoons cinnamon

1/2 teaspoon salt

- bring to a simmer on medium heat

- after adding slurry, keep whisking on high heat until thickens into pudding-like consistency

- remove from heat and add 2 teaspoons of vanilla extract


Cornstarch slurry (binding)

114 cups oat milk

1/3 cup cornstarch

- mix until homogenous

- Add into cinnamon pudding mixture once simmering


Brown Sugar Margarine Crumbs

1/4 cup cold margarine/butter cut into cubes

1/4 cup brown sugar

1/2 teaspoon salt

- crumble together with a pastry cutter, clean hands, or a fork until well mixed
